Sweet Heat Cedar Plank Salmon Bites

Sweet Heat Cedar Plank Salmon Bites Recipe

Protein:

  • Skin on Filet Atlantic Salmon
  • Cut into 1" x 2" pieces and place on a cedar plank.
  • Leave about 1/2" space between the pieces.

Rubs:

  • 1st rub - Sweet Rub O' Mine Apple Chipotle (light even layer)
  • 2nd rub - Loot N' Booty BBQ Everything Rub (light even layer)
  • Add rub about 30 minutes before cooking

Sauce:

  • 3/4 cup Texas Loot N' Booty Southwest Sweet Heat BBQ Sauce
  • 1/2 cup Texas Pepper Jelly Peachy Peach Habanero Rib Candy
  • 1/8 cup Honey
  • Mix together and warm up.

Temperature Gauge:

Thermapen MK4 - Highly recommend everyone have one of these to check the meat temperature.

Charcoal:

B&B Apple Pellets for pellets smokers

Kingsford for grills is my goto with a small piece of applewood chunk.

Cook at 300 degrees on INDIRECT HEAT till they get to 145 degrees. Usually takes 30-40 minutes. Once they are done, take off the grill, remove skin, and dunk in warm BBQ sauce. Put back on a cedar plank and in the grill for 5 minutes to set the sauce. Take out and serve them while warm.
